Ingredients
  

  • 1 medium zucchini 
  • 1/2 tsp  salt 
  • 1  egg
  • 1/2 cup chedddar cheese
  • 1/4 cup  seasoned bread crumbs
  • 1 thinly sliced green onion
  • 1 tbsp all-purpose flour 
  • 1 tbsp  grated parmesan cheese
  • 1/2 tsp  baking powder
  • 1 tbsp  vegetable oil for frying

Instructions
 

  • Start by grating your zucchini using the larger holes on a box grater.
  • In a bowl, mix the zucchini with the egg, cheese, breadcrumbs, green onion, flour, and baking powder until well combined.
  • Shape the mixture into four patties, about 3-inches each across.
  • In a large skillet, heat the oil over medium heat. Make sure the oil is hot before adding the fritters. 
  • Cook each patty for 3 to 5 minutes per side until they're golden brown.
