Ingredients
  

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 6 tbsps softened butter
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 tsp vanilla
  • 1 cup eggnog

GLAZE

  • 3 cups  confectioners sugar
  • 3 tbsps  eggnog
  • cinnamon for sprinkling

Instructions
 

  • Heat oven to 400 degrees. Line muffin pans with cupcake liners or lightly coat with cooking spray.
  • In a small bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg.
  • In the bowl using a hand mixer, beat together the granulated sugar, brown sugar and butter until fluffy. Add in eggs 1 at a time. Add in vegetable oil and beat until incorporated. Add vanilla and mix.
  • Gradually add in dry ingredients and eggnog. Blend until mixed. Pour batter into prepared muffin pans.
    Bake for 15-18 minutes until done in center. Remove from oven and place muffins on a wire rack to cool.

GLAZE INSTRUCTIONS

  • In a small bowl, whisk together confectioners sugar and eggnog. Dip the top of each muffin into the glaze.
    Sprinkle with cinnamon and drizzle on additional glaze.
