Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsps baking soda
  • 3/4 tsp salt
  • 1 3/4 tsps ground cinnamon
  • 3/4 tsp pumpkin pie spice
  • 1 /4 tsp ground ginger
  • 1/2 cup canola oil
  • 2 eggs (at room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup pumpkin purée
  • 1 cup peeled and shredded apple
  • 2 carrots peeled and shredded
  • 2 tbsps milk
  • 1 cup chopped walnuts

Instructions
 

  • Preheat oven to 350˚F.
  • In large mixing bowl combine all ingredients.
  • Pour into a greased and lined 9”x5” loaf pan. Bake for 60-70 minutes, covering with foil halfway through baking.
  • Serve with butter, or cream cheese.
