Pillow-Soft Dilly Rolls

I have had this wonderful recipe Pillow-Soft Dilly Rolls for years. I use to make these all the time at work and had many employees come to the kitchen and get them hot right out of the oven.

We served them for Thanksgiving at the place where I worked very year and we made usually made around 300! Families came to be with their loved ones and everyone wanted the recipe! You might say I am the Dilly Roll Queen.

My maintenance man would be first in line to get some and said they were the best roll he ever had. What a sweet guy!

He was the one that told me all my food was so good because “I Sprinkled It With Love” before I sent it out to everyone. He is coming to visit soon and I will have them coming out of the oven just like when we worked together.

INGREDIENTS NEEDED…

  • Cottage cheese
  • Unsalted butter 
  • Active dry yeast
  • Warm water
  • Sugar
  • Dried minced onion….(I do not add this but you can if you want.)
  • Dill weed
  • Salt
  • Baking soda
  • Flour

Your family is going to love these rolls. They are so soft and I love the earthy flavor of dill in every bite.

Ingredients
  

  • 2 cups  cottage cheese
  • 2 tbsp unsalted butter
  • 2 pkgs active dry yeast
  • 1/2 cup warm water
  • 1/4 cup sugar
  • 2 tbsp dried minced onion
  • 1-2 tbsp dill weed
  • 1 tbsp salt
  • 1/2 tsp baking soda
  • 4 1/2 -5 5 cups flour

Instructions
 

  • In a large saucepan over medium heat, heat cottage cheese and butter until butter is melted cool. In a large bowl, dissolve yeast in water.
  • Add eggs, sugar, onion, dill, salt, baking soda and cottage cheese mixture. Add 3 cups of flour; beat until smooth.
  • Add enough remaining flour to form a soft dough. (It usually takes all 5 cups)
  • Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top.
  • Cover and let rise in a warm place until doubled, about 1 hour.
  • Punch dough down. Form into 24 balls; place in a 13×9-in, baking pan that has been sprayed with cooking spray.
  • Cover and let rise until doubled, about 45 minutes.
  • Bake at 350° for 20-25 minutes. Brush warm rolls with melted butter.
