Let’s Make Some Rolled Chicken Tacos
As life continues to get busier and busier I am always looking for quick meals that my family and grandkids will love. This recipe for Rolled Chicken Tacos using rotisserie chicken will make a dinner that will hit the spot for all of them.
Even picky kids will eat a couple of these Rolled Chicken Tacos, and they make a delicious snack.
Also known as taquitos, these rolled chicken tacos are popular with all ages. I know this is one of those recipe you will make quite often.
Taquitos are a Mexican dish consisting of a small tortilla that is rolled around a filling of meat and cheese and then deep-fried (“small tacos”). They are so incredibly yummy and I know you’ll love them as as much as we do.
Their shape and mild flavor make them a hit with kids, and they can be a great way to sneak in some veggies. ( like bell pepper, zucchini and onions.)
INGREDIENTS NEEDED FOR CHICKEN TACOS……
- Cream Cheese
- Salsa
- Ground Cumin
- Granulated Garlic
- Salt
- Leftover or Rotisserie Chicken
- Shredded Cheese
- Flour Tortillas
- Olive Oil or Cooking Spray
If you have any left after lunch just place the leftovers in an airtight container and refrigerate. They will stay fresh for 3-4 days.

Ingredients
- 4 ounces softened cream cheese
- 1/2 cup salsa
- 1 tsp ground cumin
- 1 tsp granulated garlic
- 1/2 tsp salt
- 3/4 pound shredded cooked chicken
- 1 cup shredded colby jack cheese
- 8 burrito size flour tortillas
- 2 tbsps olive oil
- sour cream for serving
Instructions
- Preheat your oven to 425°.
- Mix cream cheese with salsa, cumin, garlic and salt until smooth, and mix in the chicken and cheese.
- Spoon into tortillas and roll up, and place seam side down on a greased or lined baking sheet.
- Spray or brush both sides of tortillas with olive oil.
- Bake for 15- 20 minutes until tacos are crisp.
- Serve with salsa and sour cream if desired. ENJOY!!
