Irish Potato Bread..No Yeast Needed!
With St. Patrick’s day just around the corner let me give share with you a recipe for Delicious Irish Potato Bread. I remember the hours I worked to give my residents a St. Patrick’s day feast they would not forget.
I boiled lots of corn beef, cabbage with melted butter, those yummy roasted little potatoes, and this bread recipe. For Dessert we served everyone a piece of Decadent Chocolate Cake!
Back to this potato bread. Did I tell you their is no yeast needed in this bread. You add mashed potatoes for a bread that has a moist and has a tender texture. (Great way to use up any leftover mashed potatoes you might have in your refrigerator.)
INGREDIENTS NEEDED..
- Cooked mashed potatoes
- Raw grated potatoes with no skins
- Egg
- Egg white
- Vegetable oil
- Milk
- Grated Parmesan cheese
- Garlic powder
- Flour
- Baking powder
- Salt
This no knead bread recipe is so savory and requires a short rise time. I love that this dough doubles in about 1 hour!

Ingredients
- 3/4 cup cooked mashed potatoes boil potatoes and mash them to a mashed potato consistency.
- 3/4 cup raw grated potatoes peel the skins, then grate, drain grated potatoes of liquid.
- 1 egg
- 1 egg white
- 1/3 cup vegetable oil
- 3/4 cup milk
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 3 1/4 cups cups flour
- 1 1/2 tbsps baking powder
- 1 tsp salt
Instructions
- Place the mashed potatoes and raw grated potatoes in a large mixing bowl, whisk together until well combined. Add the egg, egg white, grated Parmesan cheese, garlic powder, milk and oil to the bowl, whisk until completely incorporated.
- In a separate large bowl, combine the flour, baking powder and salt, stir to combine. Stir the dry ingredients, into the wet ingredients until a soft dough is formed.
- Grease a 8" round cake pan or pie dish. After kneading dough several times, form dough into round loaf and place in prepared pan.
- Bake 375 degree for about 45-55 minutes, until golden and sounds hollow when tapped on. Remove to wire rack to cool.
