INGREDIENTS…
- All-Purpose Flour
- Granulated Sugar
- Brown Sugar
- Baking Powder
- Ground Cinnamon & Nutmeg
- Salt
- Eggnog
- Large Egg
- Butter
- Vanilla Extract
- Vegetable Oil
If you want a plain muffin instead of eggnog (or you don’t have enough eggnog), you can substitute whole milk instead.
Cool before storing Eggnog Muffins in an airtight container so moisture doesn’t collect. Refrigerate Eggnog Muffins for up to 1 week, and warm before serving.

Ingredients
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 3/4 tsp nutmeg
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 6 tbsps softened butter
- 2 large eggs
- 1/4 cup vegetable oil
- 1 tsp vanilla
- 1 cup eggnog
GLAZE
- 3 cups confectioners sugar
- 3 tbsps eggnog
- cinnamon for sprinkling
Instructions
- Heat oven to 400 degrees. Line muffin pans with cupcake liners or lightly coat with cooking spray.
- In a small bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg.
- In the bowl using a hand mixer, beat together the granulated sugar, brown sugar and butter until fluffy. Add in eggs 1 at a time. Add in vegetable oil and beat until incorporated. Add vanilla and mix.
- Gradually add in dry ingredients and eggnog. Blend until mixed. Pour batter into prepared muffin pans. Bake for 15-18 minutes until done in center. Remove from oven and place muffins on a wire rack to cool.
GLAZE INSTRUCTIONS
- In a small bowl, whisk together confectioners sugar and eggnog. Dip the top of each muffin into the glaze. Sprinkle with cinnamon and drizzle on additional glaze.
