Easy Zuchinni Fritters
Today I am sharing a recipe for Zucchini fritters. We grow zucchini in our garden every year. These zucchini fritters have been a favorite of mine for years. Just one plant can produce so many Zuchinni you can pass them out to your friends and family.
Zuchinni Fritters are made with simple ingredients and they’re quick & easy to whip up. Plus these zucchini fritters are the perfect way to sneak in more veggies in your food.

INGREDIENTS YOU WILL NEED..
- Zucchini
- Salt
- Egg
- Mozzarella or Cheddar Cheese
- Seasoned bread crumbs
- Green onion
- Flour
- Grated Parmesan Cheese
- Baking Powder
- Vegetable oil for frying
- YUMMY DIPPING SAUCE……
- ¼ cup Greek yogurt
- ¼ mayo
- 1 teaspoon ranch seasoning mix
- 1 tablespoon milk
- ¼ cup grated Parmesan cheese
- Mix altogether and enjoy!!
Zucchini Fritters are one of our families favorite ways to use all that abundance of zucchini. We like to warm up some spaghetti sauce and spoon some over the top of the fritters and a dollop of sour cream. The sauce I included up above is delicious as well.

- Start by grating your zucchini using the larger holes on a box grater.
- In a bowl, mix the zucchini with the egg, cheese, breadcrumbs, green onion, flour, and baking powder until well combined.
- Shape the mixture into four patties, about 3-inches each across.
- In a large skillet, heat the oil over medium heat. Make sure the oil is hot before adding the fritters.
- Cook each patty for 3 to 5 minutes per side until they're golden brown.
