Delicious Treat…Strawberry Shortcake Mini Stacks
Hi Friends, I love Valentine’s Day and it is quickly approaching! I love Valentine’s Day because I get to share love with my whole family!!
I am a person that when I wake up I jump out of bed and start the day. I am usually up by 6 since I have retired. I had to go to work at 5 a.m. for years so my body clock is stuck there. If someone were to bring me breakfast in bed on Valentine’s Day they would have to get up way early.
This recipe I am sharing today for Strawberry Shortcake Mini Stacks, turns your normal breakfast into a delicious treat. These strawberry cheesecake pancakes are sure to start your families day off with many smiles from all.
They are going to love it!!
The recipe for these strawberry flavored pancakes is so simple and easy.
Ingredients….
Buttermilk Pancake Mix
Water
FILLING…..
Cream cheese
Powdered sugar
Vanilla
Whipping cream
Strawberries
Instead of strawberries…..you could also use raspberries, blueberries, or blackberries.

STRAWBERRY SYRUP/SAUCE:
- 3 cups fresh sliced strawberries, stems removed
- ¼ cup organic cane sugar
- ½ lemon, freshly-squeezed
- 3 Tbsps strawberry preserves/jam
In a saucepan, add together all ingredients over medium-high heat, stirring until combined. Once strawberries begin to soften, continue stirring until mixture begins to thickened a bit, about 5-6 minutes. Remove from heat and let cool completely.

Ingredients
- 3 cups buttermilk pancake mix
- 2 cups water
FILLING
- 4 ounces softened cream cheese
- 1 cup powdered sugar
- 1 tsp vanilla
- 1 cup whipping cream, whipped to stiff peaks
- 1 1/2 cup sliced strawberries
Instructions
- Prepare 3 cups pancake mix as directed.
- Using a small cookie scoop pour 1/8 cup batter per pancake onto a griddle.
- Cook at least 24 pancakes. Cook pancakes approximately 45 seconds to 1 minute per side, turning only once. Set aside.
- Whip together cream cheese, powdered sugar, and vanilla. Fold in whipped cream.
- Assemble by starting with 1 pancake then pipe or spread a tablespoon of filling on top of the pancake, top with a few slices of strawberry, then another pancake. Repeat to create another layer and create a stack.
