Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 tsps baking soda
- 3/4 tsp salt
- 1 3/4 tsps ground cinnamon
- 3/4 tsp pumpkin pie spice
- 1 /4 tsp ground ginger
- 1/2 cup canola oil
- 2 eggs (at room temperature)
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup pumpkin purée
- 1 cup peeled and shredded apple
- 2 carrots peeled and shredded
- 2 tbsps milk
- 1 cup chopped walnuts
Instructions
- Preheat oven to 350˚F.
- In large mixing bowl combine all ingredients.
- Pour into a greased and lined 9”x5” loaf pan. Bake for 60-70 minutes, covering with foil halfway through baking.
- Serve with butter, or cream cheese.
