Spine-Chilling Eyeball Halloween Spaghetti
Halloween was a BIG Deal when the kids were growing up. We lived way out in the country so we did not get trick-or-treaters. But that did not matter, we put on our own Halloween Party and had so much fun.
Along with our own chidren we raised foster kids in our home for 15 years. We made lots of memories I hope they will always remember.
With Halloween right around the corner, the perfect way to celebrate is with a fun dinner that both kids and adults will love.
We always cooked a stew in a huge pumpkin and served it with fresh scones and honey butter. I recently found this Spine-Chilling Eyeball Meatballs with Spaghetti that my children would have loved for Halloween as well.
This recipe is so easy to make with only 5-ingredients your family will love this delicious Spooktacular Meal.

Ingredient Notes
- Spaghetti… For an even spookier version of this already spooky pasta add black food paste colorant to the water when cooking the spaghetti.
- Ground Beef Meatballs
- Marinara Sauce
- Provolone cheese
- Black Olives
This meal makes great leftovers. You can store in an airtight container in the fridge for up to 5 days.

Ingredients
- 1 pound spaghetti
- 1 pound ground beef meatballs
- 11/2 cups warmed marinara sauce
- 8 oz sliced provolone cheese
- 1 2.25 ozs canned sliced black olives
Instructions
- Preheat the oven to 400F and line a rimmed baking sheet with some lightly oiled parchment paper.
- Place the meatballs on the baking sheet and bake for about 7 minutes, then turn to the other side and bake for an additional 7 minutes.
- When they’ve finished baking place a cut slice of 1" circles of provolone atop each of the meatballs to create the whites of the eyes.
- Place one slice of black olive atop each provolone circle to create the irises/pupils of the eyes.
- Return the meatballs to the oven for 2-3 minutes or until the cheese has slightly melted. Remove from the oven and set aside.
- Meanwhile, bring a large pot of salted water to a boil, add spaghetti and cook according to package directions. Drain well and transfer to a serving platter.
- Pour warm marinara sauce over spaghetti, then scatter with meatballs.
