INGREDIENTS NEEDED TO MAKE THIS EASY LEMON ICEBOX PIE
Cream Cheese
Lemon
Sweetened Condensed Milk
Lemon Juice…. use fresh lemon juice! Not the bottled lemon juice. You will need about 1/2 of a lemon to get 1 tablespoon fresh lemon juice.
Yellow Food Coloring…..use a drop or two for a deeper yellow color of the pie.
Graham Cracker Pie Crust
Whipped Cream
Refrigerate the pie, tightly covered with plastic wrap, or in an airtight container, for up to 5 days, or you can freeze it for up to 3 months.
One of the things that you will love about making this No-Bake Lemon Icebox Pie is that you can serve it chilled or frozen.
Take it out about 20 minutes before you want to serve it. Thaw it just until it softens a little but still has the consistency of ice cream.

Ingredients
- 1 9" graham cracker crust
- 1 8 oz. cream cheese (room temperature)
- 1/2 cup fresh lemon juice
- 1 14 oz. can sweetened condensed milk
- zest of two lemons
- whipped cream
Instructions
- Place the cream cheese into a mixing bowl and with a mixer blend until smooth and creamy. Add the sweetened condensed milk, lemon juice and lemon zest and blend again until the ingredients are completely smooth.
- Pour the filling into the graham cracker pie crust, and chill in the refrigerator for 2 hours to set.
