Old-Fashioned Ice Cream Sandwiches

Ice cream sandwiches are always a part of summer. Once you make them for your family and friends, there’s no going back to the store-bought version because the homemade taste will blow them away! They’ll be asking you to make them again and again!

There are records of pushcart vendors selling slabs of ice cream between pieces of paper in the 1890s. Noted food historian Jeri Quinzio told The Boston Globe that these early creations were called “hokey pokeys” and sold for the princely price of a penny.

INGREDIENTS NEEDED….

  • Flour
  • Cocoa Powder
  • Baking Soda
  • Sugar
  • Butter
  • Egg
  • Vanilla ice cream

This recipe calls for vanilla ice cream, but you can actually use whatever ice cream that you prefer.

If you don’t eat them all at once, they can be wrapped in plastic individually and be stored in the freezer for up to one week.

Ingredients
  

  • 3/4 cup Flour
  • 1/4 cup Cocoa Powder
  • 1/2 tsp Baking Soda
  • 1/2 cup Sugar
  • 1/2 cup softened Butter
  • 1 egg
  • 1 qt. vanilla ice cream

Instructions
 

  • Preheat your oven to 350 degrees. Line your cookie sheet with parchment paper.
  • Whisk together flour, cocoa powder and baking soda. Then set aside.
  • Beat together butter, sugar, vanilla and egg until creamy, add dry ingredients and mix until combined.
  • Spread onto prepared pan and bake for 8-10 minutes or until top is dry but still soft.
  • Use a knife and split sandwich cake in half. Take frozen ice cream and remove from carton. Cut into 3/4″ slices.
  • Arrange ice cream slices on top of half of sandwich cake to cover it completely.
  • Place other half of sandwich cake on top of ice cream.
  • Wrap in plastic or parchment and place in freezer for at least 2 hours. Remove and cut into 8 rectangles with a sharp knife.
