Boxty Irish Food

Irish boxty are a traditional Irish potato pancake. Call them whatever you will, they’re essentially a soft on the inside, crisp on the outside potato pancake. If you’ve never tasted an Irish boxty, you are in for a treat.
Boxty is an authentic Irish dish which originated in the 1700s. It was a staple food in Irish households where potatoes were relied upon to survive.
Many Irish families relied on potatoes as their main source of food. Irish farmers grew other crops too, but everything else was sent to England to pay the farmers’ rent.
It’s commonly served with smoked salmon, sour cream, sausages, fried eggs, bacon, lamb chops, and even the notorious Irish beef stew. Boxty is regularly eaten at breakfast, but it’s really a food you can enjoy any time of day. It’s just that good.
Irish Boxty Ingredients
- All-purpose flour
- Salt & pepper
- Baking powder
- Russet potatoes, grated
- Mashed potatoes
- Egg
- Heavy cream
- Butter
Serving these with sour cream and chopped scallions or you can serve this boxty sweet-style with a little butter and honey or sugar.

Ingredients
- 1 cup flour
- 1 1/2 tsps salt
- 1/4 tsp pepper
- 2 tsps baking powder
- 1 cup grated russet potatoes (peeled)
- 1 cup mashed potatoes
- 1 lightly beaten egg
- 2 tbsps heavy cream
- 1/4 cup butter to fry them in.
Instructions
- Whisk together the flour, salt, black pepper, and baking powder.
- Mix the two types of potatoes, the egg and cream.
- Stir in the flour mixture. The mixture should be thick, but able to spread out to cook into a patty. Add more cream if needed.
- Once the butter is hot, scoop mounds of the potato batter into the pan, spreading it lightly into flat circles around 1/3 of an inch thick
- Fry each sides of the patties for 2-3 minutes until well browned on the bottom, then flip.
- Serve hot with sour cream.
