Authentic Recipe For Irish Kerry Apple Cake

Have you heard of Irish Apple Cake? I love apple anything. If you want a yummy dessert for St. Patrick’s Day this is the recipe to make. I know you will love it. The great thing is you can serve this delicious dessert any time of the year.

The National Dessert of Ireland it know as the Kerry Apple Cake. They grow a lot of apples in Ireland so no wonder that they have a recipe for this delicious cake.

Although there are several versions of Irish Apple Cake or Kerry Cake it is likely that one of those recipes was passed down from great grandmother to grandmother and so on.

I use Granny Smith apples. They are perfect in this recipe because they are tart, and they do not get mushy while baking.

Other options that would work well are Honeycrisp or Braeburn apples, however, they are less tart than Granny Smiths.


INGREDIENTS TO MAKE A IRISH APPLE CAKE…..

  • Granny Smith Apples
  • Eggs
  • Milk
  • All-Purpose Flour
  • Granulated Sugar
  • Baking Powder
  • Ground Cinnamon and Ginger
  • Cloves
  • Unsalted Butter
  • Custard Sauce

INGREDIENTS FOR CUSTARD SAUCE……(from The View From The Great Island)

  • 6 large egg yolks
  • 1/4 cup sugar
  • 1 1/2 cup whole milk
  • 1 Tbsp. vanilla

INSTRUCTIONS…

  • Whisk together the eggs and the sugar.
  • Add the milk to a sauce pan on the stove and set the flame to medium to low. Keep an eye on it to make sure it’s not boiling or even simmering. You want to steam it so when you see steam coming off the surface of the milk, it’s done.
  • SLOWLY whisk together a little bit of the milk with the egg mix. You do this slowly to keep the eggs from scrambling. Add the milk little by little, whisking gently.
  • Once all the milk has been added to the egg mix, add everything back to the sauce pan and heat over low. Whisk slowly and frequently to ensure the eggs aren’t scrambling. The idea is to cook them so slow they create custard. it will take 5-10 minutes. You will know it is done when the custard mix coats the back of the spoon nicely but is still runny.
  • Remove it from the heat and let it rest. Continue to slowly mix every now and then. After about 10 minutes whisk in the vanilla.

Surely you could bring it to work for a Saint Patrick’s Day potluck where it would be eaten very quickly.

This cake will last up to 4 days at room temperature. You can also freeze it for up to 1 month. Just allow defrosting fully before serving. You can also refresh it a little in the microwave or cover it in foil in a 350°F (180°c) oven for 15 minutes.

No matter what the occasion, this is a wonderful cake to serve. You usually will not have any left-overs.

Ingredients
  

  • 3 cups flour
  • 2 tsp baking powder
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/8 tsp salt
  • 6 tbsps cold unsalted butter
  • 1/2 cup sugar
  • 4 large cored green apples
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup white sugar

Instructions
 

  • Preheat ove to 375° and  spray a 9" round springform pan.
  • Sift together flour, baking powder, cloves, nutmeg, and salt into a large bowl.
  • Blend the butter into the flour mix using your fingers until the mix resembles fine crumbs.
  • Add the 1/2 C. sugar to the flour mixture and whisk together.
  • Peel and slice the apples into bite-size cubes. Stir into the flour mixture.
  • Beat the eggs and milk together in a clean bowl. Using a wooden spoon, stir liquid mixture into the apples and flour mixture until just combined and dough-like.
  • Transfer the doughy batter to the prepared cake pan.
  • Sprinkle the remaining sugar over the cake.
  • Bake for 45-50 minutes, or until a toothpick inserted in the middle comes out clean. The top will be golden brown. Serve with the Custard Sauce recipe up above.
